Will modified thinset stick to RedGard?
From what I have read, the premixed thinset does not dry out to form a good adhesive bond when applied over/under a non-permeable membrane like Redguard or the Kerdi-band products. The dry mix (where you add the water on-site) does.

Which is thin set over redgard waterproofing?
I have used Versabond from HD and it works great but any modified thinset will work. You don’t need to Redgard the whole shower, just the joints and any niches or seats. Redgard is meant to have thinset applied over it so no prep is needed. I’m assuming that you have constructed the rest of the shower properly.
